Domo owner/chef Gaku Homma was born in an area of Japan famous for its delicious rice. He carefully selects the best brands of rice to serve at Domo and blends them with special glutinous rice for an added chewy texture. Consistent with Japanese tradition, barley is added to Domo’s rice for its nutritional value and taste. Domo guests are sometimes surprised to see a bit of barley in their rice, but it’s included with care and the sincere consideration of the owner for its taste and health benefits.

Kome (rice) is of monumental importance in Japan and is an irreplaceable part of Japan’s history and culture. Rice was used as legal tender before currency and the status of a samurai was measured by his worth in rice. Interestingly, the majority of Japanese people didn’t begin eating rice until the 1900s. Before then, the lower classes in the feudal system in Japan ate other grains, for example, beans and starchy vegetables. Eating rice was limited to the ruling classes.

Mugi (barley) is one of the five staple foods in Japan known as gokoku (go is the word for five, and koko is the word for grains). Rice, millet, foxtail and soybeans are the other four staples that make up gokoku. Gokoku was commonly made into a porridge that ws standard fare for the farming classes who longed for the pure white rice served to their lords. Mugi was once looked down upon as food for the poor, and as rice became more available to the general population, demand for this nutritious grain declined.

Guests at Domo Restaurant have a choice between white rice with barley or brown rice. Although many Japanese restaurants in the Denver area now offer both white and brown rice, Domo was the first restaurant to offer this choice to guests. Domo’s owner/chef Gaku Homma is pleased that many Japanese restaurants in Denver have followed Domo’s lead and offer similar choices.
