This Japanese dish ABURA NA NO SHOYU ARAI is well known for stimulating all the senses. It is colorful, flavorful and full of different textures -- from soft, leafy green to swirling burgundy, rough-skinned earth brown, crunchy skinny beige and tiny white. It is truly a beautiful side dish. Abura na (rapeseed plant), funori (seaweed), aburaage (fried tofu puff) jicama and goma (sesame seed) each brings its own unique flavor and taste sensation to this fabulous medley. Domo side dishes are symphonic -- each ingredient is an instrument of taste and sensation masterfully combined to create a culinary symphony. This Domo side dish is full of craftsmanship. The Japanese words “shoyu aria” translates literally as “washed in soy sauce,” which is indeed a confusing name. Not to worry. The excess shoyu (soy sauce) is squeezed from the ingredients, leaving just the right amount of soy sauce mixed with freshly grated ginger for taste. Domo uses jicama, a vegetable from Mexico, instead of nagaimo (Japanese long white yam) because of its availability, juicy taste and crunchy texture. The use of Jicama is a wonderful adaptation for this Colorado favorite. This elegant side dish shows off some of the sophistication that can be found in Japanese country cooking. The word aburana (rapeseed plant) literally translates as “oil leaves.” Abura is the world for oil, and na is the word for leaf. The seeds of this plant are collected and pressed for the high-quality oil they posses. Before the days of electricity, rapeseed oil was a precious commodity for the Japanese, who used it for light and heat in oil lamps. In springtime long ago, villagers would pick the young sprouts of the aburana plant along the paths that led from the temples and shrines to their homes after morning prayers. The freshly picked greens were soon cooked and served fresh for breakfast. In a simpler time, a simple pleasure of spring was the enjoyment of this young aburana.
