The side dish IRIDOFU can be made with scrambled tofu as simply or extravagantly as desired depending on the creativity of the chef. Adding meat and eggs, for example, turns IRIDOFU into a lavish main dish. Domo’s IRIDOFU side dishes vary day to day but usually include a variety of colorful vegetables and seaweeds. Even an all-vegetable presentation is a nutritious and delicious treat for guests at Domo. Imagine a food you could eat as much as you want and not gain a pound or an inch. The Japanese have had such a food in their diet for more than a thousand years. This ingredient -- often found in Domo’s IRIDOFU side dish -- is called konnyaku and is made from the yam potato. Konnyaku is extremely low in calories contains no fat and has many health benefits. The starch in konnyaku, called glucomannan, is indigestible in the human body. In the digestive system it turns to jelly and expands; telling the brain that the stomach is full, thus serving as a natural weight-loss aid. Scientists and researchers in the United States are using konnyaku extracts in cakes and cookies as a calorie-reducing substitute for refined flour. The high water content in konnyaku may help in the removal of kidney and bladder stones. Centuries ago, konnyaku was used as a digestive aid. There is a story of a man who was working on the monumental construction of the Hizen Nagoya Castle. He fell ill, suffering severe abdominal pain. His wife prayed desperately for a cure for her husband’s ailment. In a dream she was told that he had a stone in his body and a special medicine would be made available to her. The next morning she found a konnyaku potato on her pillow. She cooked the konnyaku and fed it to her ailing husband, who miraculously recovered from his ailment and returned to work. After hearing this story, the lords of the land decreed that all citizens should eat more konnyaku to ward off malady. Needless to say, the consumption of konnyaku increased dramatically.
