Domo Restaurant serves a number of dishes made with soba (buckwheat noodles). These dishes range from hearty hot soups to refreshing soba salads and Domo’s own SOBA AE side dish. Domo mixes fresh lettuce and wild mountain vegetables with the chewy Soba noodles for added taste and texture in its SOBA AE. The fresh array of greens -- from forest to lime to emerald --make this nutritious side dish a beautiful Domo favorite. There is an interesting Japanese folktale about soba. According to the story, when Gods and Goddesses walked the earth like ordinary people, plants were also able to walk and talk. The God of Plants decided to come to earth to see how his children were behaving. “One day during a cold winter, mugi (barley) and Soba (buckwheat) were chatting by a large river. Along came an old beggar dressed in tatters who asked them to carry him to the other side of the river. Mugi refused by Soba, who was a kind fellow volunteered. Soba told the beggar to hop up on his back and he began to cross the river carrying the old beggar. Although the water was painfully cold, Soba was able to reach the other side successfully. When they had once again reached dry land, the old beggar thanked him, revealing his identity as the God of all Plants. He then granted Soba a short growing season so that his roots would not have to endure the cold. Mugi on the other hand was punished and sentenced to an eternity of enduring long cold winters for his time to grow”. Buckwheat grows in northern Japan and other cooler climates around the world. It is a hearty plant and can grow in less fertile or acidic soil. The nectar from the fragrant buckwheat flower is collected to make a strong flavored, dark honey. The husk of the buckwheat (sobagara) is used as a stuffing for pillows and is sought after for its durability and ability keep the head cool. The Japanese are fond of noodles, and buckwheat is mainly used for making soba noodles. Because of its lack of gluten, buckwheat flour does not make a highly elastic dough.
